Yellow tea is traditionally compared to Oolong tea because it is a semi fermented tea. This is true but it has a unique production process which sets it aside from the other oolong teas. In the past been the special yellow teas were reserved only for the monks and royalty.
The production of yellow tea has been kept secret for many years. What makes yellow tea yellow is the addition of two extra stages in the production process. The first is where the teas are laid out on bamboo mats before they are rolled and then after rolling the teas are stored in a constant and temperature for 2-3 hours where the leaf oxidises more. This turns the tea yellow. After this process the tea is fired twice.
The yellow tea extract is known for boosting metabolism and burning fat quickly. This is due to polyphenols and catechins present in yellow tea.
